Job description

Main responsibilities:

Ensure optimal service quality in compliance with HACCP standards and Paris Society quality guidelines

  • Perform all preparations related to your station while following recipe instructions on methodology, timing, and presentation, and anticipate the preparations required for the next service
  • Ensure strict application of hygiene procedures and compliance with cleaning processes for station equipment and materials
  • Ensure the proper functioning of your station in compliance with Paris Society standards

Assist other brigade members in preparing ingredients needed for cooking

  • Report technical or personnel issues to the section head, sous-chef, or head chef
  • Take part in service-related meetings and be able to communicate across different hierarchical levels
  • Take part in receiving goods and ensure their quality and quantity (including expiry date checks)
  • Carry out all preparations for service

Technical skills

  • Know all hygiene procedures and current HACCP standards
  • Know and master all techniques necessary to ensure the proper functioning of your station
  • Know the Paris Society group’s quality standards.
  • Understand the overall organization of the kitchen.
  • Know all ingredients and products involved in any culinary preparation
  • Ability to manage supplies related to your station and, if needed, all other stations.
  • Know and execute all recipes and menus related to your station to ensure consistent quality.
